Software engineers for the software engineering positions. We might have some Mechanical engineering people working here... although they certainly arn't doing any mechanical engineering.
Note that my degree is actually Computer Science, however I don't really see any difference between the 2.

I don't have any exact numbers. I think we get a lot for the associate positions and never enough for the senior positions. I would think that less well known game companies would get less associate resumes like we did in the beginning.

I'm only not to familiar with the US system, down under the Gen Eds are part of high school.
However you should do something that your passionate about whatever it takes. You will find yourself much more successful if you do that.

Yes. There are plenty of guides on the internet. I don't think there is one right language. It depends on what you want to write for. Do you want to write for Xbox? Maybe XNA is your choice. PC? maybe C++. Webpages? Maybe HTML 5 or flash. There is no real rule except to go out and do it and some skills will transfer across.
I would say that C++ is the most widely used language still so it may be your best bet.
