Highly agreed with everything in your post until the very last line...
One does not simply "beat" an Ahri in lane.
One Outplays her.
You can poke with E? She can dodge (when she can see it- god that bug is utter BS).
She can poke with Q? You can dodge.
Gravity Field? Avoided. Charm? Dodged. About the only thing you have on her is a point-click Q, and yet, with just a little foresight she can land either part of W or even a Q on you while the shield's in transit and tie/win the trade.
ANYWAYS, since you've gotten all the Viktor mains already, here's an Ahri main's perspective XD
Firstly, in terms of pickup...
Ahri is much more forgiving than Viktor; you'll be doing decently much faster on her than on Vik. This is because she directly revolves around positioning and skillshots, meaning your raw skill at this game transfers into her at nearly 100%. Plus she's got that triple-longer-than-flash-dash on a CD that's between 1/3 and 1/4 the CD of flash. Vik on the other hand is likely to get dominated until you get the hang of him- at which point how you do in-lane will give you whiplash since people aren't used to vsing him
at all.
In terms of skill cap...
Honestly they're about the same. The only difference is the length of the journey. Ahri goes from being decent once you pick her up to being godlike due to how well her kit rewards outplaying. Viktor goes from being trash tier to being godlike due to his kit being really quite strong- that ult is scary, and you'll be laughing with Vik every time you land an E. I know I was when I was playing him his free week XD
In terms of Laning...
Tobster hit this one perfectly- at least, for Ahri.
From my experience, the only champion that can *really* autowin vs Ahri is Talon (and probably Mantheon for a similar reason, but I haven't faced him mid yet). And that's entirely because I haven't had a chance to figure out the trick to beating him on her (only faced it once; theorized like all hell since lol). Morganna has to land her snares to be a threat to you, Galio has to land his spells to be a threat to you (and you're one of the few that can solo-handle his ult if you time Charm right), Kassadin has to play passively to have a good chance (because if he towerdives and you haven't been slacking, you just won). All three aren't able to pull their Usual Anti-Magic-Damage BS as well because Ahri's AA animation is INCREDIBLY clean (as well as her starting AA stats being pretty good for a caster) on top of her Q's True Damage. Ryze flat out cannot trade with her until late game meaning his counter to her is incredibly reliant on how his side-lanes are doing and configured. Malzahar will just make her really really really really really really really really really really really really mad: Voidling will ALWAYS tank charm NO EXCEPTIONS; his facelazor
requires you to buy a QSS because unless he's an idiot or you're terrible, every single team fight he's going to ult you until you do; plus you cannot sustain keeping up with his ability to push without having blue buff. I mean, there are some hard matches, but for the most part, it all boils down to skill with her. Even LB can be beaten by Ahri in-lane- it's just dependent on how well you predict her blinks and how well she predicts yours.
Viktor.... Dunno, don't play him enough to really have a feel for him.
In terms of Fun...
Both are highly fun especially once you get good. Vik will have you spouting his cheesy assimilation jokes on All Chat and laughing maniacally while you do it, and Ahri will have you asking your team if they trust you before every game. When the fighting starts, Ahri's darting around having her way with the other team's HP bars with her short CDs and Spell Vamp keeping her alive, and Vik is creating huge zones of I-don't-wanna-fight-here-oh-god-why-ow and reliably cockblocking the Kat. During laning, Vik's E is oodles of fun, and Ahri has some amazingly satisfying dance partners (LB and Akali are probably the best; Kass would be if you didn't normally have to bait a towerdive to kill him). Really, they work out to about the same in this category.
I say get both =P Why? Because I'm not you and I'm not going to make your decisions for you.
