I would love to do what you do. It's my current goal in life to develop content for Riot, and I've been writing up champion concepts/bios to build up a portfolio.

What was the last champion you worked on? Do you touch all the champions, or are you assigned specific ones at a time?

I produce recurring videos (Spotlight, Patch Preview), produce individual promotional videos (like for Spectator Mode), and shoutcast tournaments

I also own "static content" on the website: Stuff like the Learning Center, Media pages, and what not.

I tend to be heavily interested in Live Design and the Champion team in general, so I tend to wander around and talk to them a lot, too.
