As long as you can customize your tags, add multiple tags to the champions (afterall, nunu can also jungle), and filter accordingly, I like the idea.

Thats the original idea I had, but I kept it pretty vague for general purposes. but yeah I would certainly love having my champs organized based on how I play them

Won't work, multiple champions can be played in various ways like I always play AP ez rather than AD, etcetera.

But the point is so that we can tag our champions the way we like to play them

If you like to play ezreal as an AP champion, then you could be able to classify him as one of your apc's
