I asked the same (sort of) question a few days ago. It seems there's a community-wide debate between AP and AD Ez.

They recently nerfed AP Ez though, from what I've read, in that they removed his heal and lowered his AP ratios.

AP Ezreal has more burst, AD Ezreal has more sustained damage.
