Why do lawyers defend for the bad guys?

Not everyone has the skill to defend themselves well. The idea that people should be able to be defended by skilled counsel supports the idea that people are entitled to an effective defense. An effective defense doesn't mean that a guilty person is entitled to get off. It means that a person's own side of the story should be presented reasonably persuasively, and holes in the other sides account be exposed.
The use of advocates means that people who lack eloquence, logic skills, or even just lack experience with the legal system (e.g. the rules of procedure, rules of evidence....) are not unfairly disadvantaged by these shortcomings, when they come up against a prosecutor whose full time job amounts to preparing and trying cases in court.

Courts exist to decide who is guilty or innocent, so a man's right to legal counsel cannot be denied on the grounds that they are guilty.

Also, that very right ensures that guilty people will have representation.

Your view on this really depends on which scenario you see as the lesser evil- an innocent man found guilty, or a guilty man found innocent.

Our justice systems assumes that the former scenario- an innocent sentenced for a crime- to be the greater evil.

As Benjamin Franklin once said, "It is better hundred guilty persons should escape than that one innocent person should suffer."

(Technically other people have said somethin similar before dear ol' Benny, but Ben's is the most popularly quoted here in the states. For more info, look up Blackstone's Formulation)

I would love to see players act as the defense- would give me a chance to act as the prosecution instead of a simple judge of the summoner's code.

That setup would require a Rioter as a judge though, and its overall faster and more convenient to just have the Rioter make the decision.

(And even more so to have a Punish player judging system to refer bad cases to Riot.)

So while I don't think that setup would be practical, it would be great fun.
