So- Zed killed shen's dad- right?
Well, didn't shen have to watch his father be tortured to become the eye of twilight? Was that what he saw when his father was tortured?

Shen was already the eye of the twilight by time zed returns to kill Shen's dad. So no.

Lore says that Shen had to see his dad tortured, but Zed just immediately cut off his head, no torture.

THis has been talked about so many times....

OK listen:

SHen saw he father being tortured before becoming Eye of Whatever. HOWEVER! Tortured does NOT mean killed; the father was tortured but still alive.

Zed then came along with his shenanigans and decapitated Shen's father: No torture involved and not part of Shen's test just a good old fashioned ninja war.
