Some people, at least in my past online experience, say gg as in let's have a good game.

Well there's always a chance in any game.
But sometimes the team compositions... ick.
Makes it near impossible at times.

I hope you mean that's a team full of awesome. Only way to beat that is be full of adcs or just make the whole team really beefy.

A lot of the "GG"s at champ select that I've seen is because the enemy team has Blitzcrank, which I've beaten in an aram multiple times before. I always believe there's a chance, even when you have no towers left, it's not over until it's over

There are some games that I really don't want to play because of team composition, but I definitely would never dodge or just give up because of it. As long as I get a champ I'm familiar with I always think there's a reasonable chance of success. But games where I get Poppy vs. Yi Nid Jayce Blitz Amumu are a different matter...

of course there is, a team of yi nid cait varus mundo (super poke team and top teir tank) vs a team of trundle udyr yorick naut hec (tanky team that only has 2 or 3 initiations, and no real damage)

I believe that "GG at champ select" is true. The fact is that some comps just, on paper, will CRUSH most others. But ARAM has no matchmaking, therefore the skill level of these players may vary DRAMATICALLY. Therefore an OP comp may be played very poorly and dominated. On another note, many people do not know how to use the less "OP" ARAM champs within Proving Grounds (such as Nasus, who, as a tank, is very underrated), therefore the less "poke heavy" comps get less love. Mind you, I've seen Nid/Xerath/Ziggs comps lose to Shen/Rammus/Ahri. I've also seen exclusively-poke comps destroy strong team fight comps based on the fact that they could kite all day with their cc.

Have Nasus go Tanky AP with mana regen, Karma go AP. Udyr and Trundle build tank, Twitch builds carry.

You've got wither, poo pillar, Karma's slowbeam, Udyr's stun, and Twitch's cask to slow them all down and keep them in Twitch's ult and Nasus's armor reducing, health melting AOE field.
