Team comps come down to personal preference of what your team likes to play.
Poke comp is really hard to counter. Setting up ambushes and catching someone out of position will let you take objectives (hard to do with Nidalee traps). High sustain helps (such as Kayle's heal). Hard initiate with CC will help you try to force team fights (Malph, Amumu, Sejuani). Try to couple the hard initiate with someone who has a gapcloser and does high single target damage (Jax, Tryndamere, Elise), as if you usually pick 1 person off, the enemy wont be able to retaliate.
It's hard to just downright say what counters what, as team comps are dynamic and not just made up of 1 champion. Experience will be your best bet in helping you figure out what counters what... I myself am definitely still learning about counter play, and building strong team comps.
