Basically, because crit damage scales so well. With an IE, two Phantom Dancers, two Bloodthirsters, and a Last Whisper, you have essentially the highest possible DPS in the game, and you can keep it up for as long as you are a) alive, and b) in range.
Ranged champions can deal damage while staying out of danger, which means they can stay alive longer, and because they're ranged, it's easier for them to stay in range. Melee carries have to swap out some of those max-damage items for lesser-damage items, and they're still not as safe as ranged carries.
