I like Elise ALOT. Shes one of my favorite mids to date. Shes fun and nukes despite the somewhat weak team fight ability. I have won 8/9 games with her mid my worst score being 5-1.

HOWEVER I just played a game of 3v3 vs. a Jax, Talon, and Ahri

The Talon and Ahri I can take, but my question is, "Is Jax a counter to elise?"

Every time we would be pushing as a team or get in a fight Jax would immediately jump to me stun me and 4 hit me with talons burst as well, multiple times he would just go straight for me and stun me for the insta kill, typically so quickly I only got away from the stun using my e a few times.

IS JAX A COUNTER TO ELISE? In general? not to a specific role?

in general, jax is a counter to anyone with no escapes and doesnt have the ability to duel him, which is very few people, lee sin/irelia being two of the few who can duel jax and win., elise has an escape but it's only if an enemy is leading her away from jax, usually doesnt happen.

Who isn't a counter to Elise right now?

Also my team blamed me for not being there when they initiated....I was defending lanes and trying to farm a bit because Jax would just stunkill me when I tried, if they said, "Oh here they are lets fight" I would go to them immediately but they would initiate before I got there.

My fault for not being there? or their fault for initiating without me when I was going as fast as I can...?
